Wilton Benitez is an extraordinary producer that has become a pioneer in new ways to process coffee. Wilton has a background in chemical engineering that he has used to his benefit when it comes to processing coffee. This particular coffee goes through 2 fermentations. In the first fermentation a yeast strain is added to the fermentation process, similar to beer and wine making, that creates a very pronounced papaya note. The coffee also goes through a thermal shock process which entails flushing the coffee with cold water to stop the fermentation process.
