Daniel Hernandez is a young and ambitious producer that has set out to make incredible coffee while being committed to sustainability. He works hand in hand with his father Santiago bridging old practices with the new. This coffee goes through a 48 hour fermentation period after being depulped. After this fermentation phase it is placed on raised drying beds.
